Ginger Teriyaki Shrimp and Broccoli Stir Fry

You’ll need:

  • 1 cup peeled shrimp
  • 1 head of broccoli, cut into florets
  • 2 tbsp coconut oil spray
  • 1/4 tbsp crushed red pepper
  • 1/2 tbsp garlic powder
  • 1/2 cup Crooked Branch Ginger Teriyaki sauce (or any other brand you can find)
  • 1/2 cup Basmati Rice (I used leftover couscous)

Set the stove to medium heat and spray  frying pan with coconut oil. Add broccoli florets to pan with a few tablespoons of water, sprinkle with salt & pepper. Cook for 3-4 minutes. Push broccoli to side of pan and add shrimp. Sprinkle with crushed red pepper, garlic powder. Once the shrimp begins to turn pink, mix together and add teriyaki sauce. Lower heat and cover.

Once cooked, remove shrimp and broccoli from pan. Add rice and water (according to basmati rice cooking instructions) to pan with leftover teriyaki juices and cook.

Once done, lay the stir fry over rice!

*Add sugar snap peas, chopped red pepper or carrots to the stir fry for more color and flavor!
