I LOVE this dip that my mom makes. She made it for my graduation party last weekend and it was devoured in seconds. So she made it the next day for Greg’s going-away party and I sat beside it shoving it into my mouth without breathing for the entire first half of the festivities. And she wouldn’t let me take leftovers so I made it the next day myself. So fresh, so invigorating, healthy, summery, delicious, juicy, “insert more adjectives here.” Recipe below.
- 1 red pepper, diced
- 1/2 a large red onion, diced
- 2 Roma tomatoes, squeezed and diced
- 1 can of black beans
- 2 avocados, sliced and diced
- 1 small bag of frozen corn, thawed
- 1 lime, juiced
- 1/3 cup fresh cilantro, chopped
- Olive Oil
- Salt & pepper
Mix all ingredients in a bowl and squeeze limes over the bowl. Sprinkle with about 2 tablespoons or so of olive oil, salt and pepper. Use as an addicting dip to tortilla chips at a party or for yourself. Also good on eggs! Xoxo; inspired by Mommy.
