The Perfect Poached Egg

Whole wheat English muffin, sliced, toasted and rubbed with butter.

Half an avocado, sliced and mashed

2 large brown eggs

Salt, pepper, cracked red pepper

Boil a small pot of water. Once the bubbles begin to rise, crack eggs one at a time into the pot. Let boil until a white foam has formed at the top of the pot. To check if done, use a slotted spoon and feel the surface of the yolk. Remove from heat and let sit.

Many people add oil or vinegar to the water but I don’t find this necessary. The egg will be oval shaped, white, and slimy, but the egg white should be firm.

Use a fork to mash avocado on English muffin. Sprinkle with salt and pepper.

Use a slotted spoon to remove poached eggs from the water. Place on the mashed avocado and sprinkle with salt, pepper, and red pepper.
