Sweet Potato with Ground Turkey and Lemon Asparagus 

You will need:

1 red onion

3 garlic cloves

A half pound of ground turkey (I used beef because that is just what I was given)

1 can of diced tomatoes

Dried oregano and rosemary

Salt and pepper

2  medium sized sweet potatoes

 

A handful of asparagus

Two lemon halves

Garlic powder

Salt and pepper

Coconut spray

Preheat oven to 400 degrees. Cut off ends of asparagus and rinse. Place on a cooking sheet and spray with coconut oil, sprinkle with salt, pepper, garlic powder, and lemon halves. For the sweet potatoes: poke holes with a fork in the top of the potato and add to the cooking sheet.

While the vegetables are in the oven, sauté onions and garlic in pan with olive oil. In a separate pan, cook ground turkey and drain. Add to onion mixture with a can of tomatoes, and a loving amount of salt, pepper, and herbs to your liking.

Check that the asparagus is crisp and tender. Remove from the oven and place the sweet potato in a bowl and microwave until cooked through.

When sweet potato is done, the skin will easily peel off. Mash with a fork, Once the turkey mixture as come to a simmer, arrange on top of the sweet potato and place asparagus on the side.
