Poached Egg, Sausage and Onion Salad

You will need:

(Add sausage, onion, and egg if serving more than one)

1/2 tbsp. olive oil

1/2 a red onion, chopped

1 sweet sausage (freeze the rest in an airtight Ziploc bag)

Water to boil in small pot

1 egg

Spring mix

A handful of cherry tomatoes, halved.

Balsamic vinegar

Salt and pepper to taste

Heat oil in pan and add chopped onion to sauté for a few minutes. Cut sausage in chunks and add to pan.

While the sausage cooks, boil a few cups of water and set aside the large egg. Once water begins to boil, crack egg into the water and let poach. I left my egg in a bit longer than usual so the yoke would harden. I don’t like yoke to be liquid gunk all on my salad.

On the side, add spring mix to a salad bowl with halved cherry tomatoes.

Once the sausage is cooked all the way through, use a slotted spoon to place sausage and onions on salad. Leave a space in the middle of the dish to place the poached egg. Sprinkle salt, pepper, and a few droplets of balsamic vinegar.

I made this lunch super quickly during my hour lunch break. Also managed to wash some dishes, call my electricity provider, send an email to my insurance company, and watch an episode of The Office on Netflix. I felt THE MOST satisfied with this lunch over any other meal I’ve had in a while; I wasn’t still hungry, and I wasn’t too full. It’s a light lunch with a lot of flavor and a perfect balance of savory sausage and sweet juicy tomatoes, a burnt crunch from the onions and a hearty egg to top it off. If you want to use more of the package of sausage and more of the whole onion, do so and save for leftovers!
