Avocado Lime Chicken

SO simple and SO mouthwateringbombdelicious.

Last week, after eating out at Tijuana and revisiting my obsession with guacamole, I yearned for more and more, craving my moms fresh, chunky guac and with salty blue Trader Joe tortilla chips.

I found this recipe on Pinterest for Avocado Lime Chicken, which I took as, basically, chicken with  fresh guacamole.

  • 4 chicken breast
  • 1 avocado
  • two big tomatoes
  • 1 clove garlic; minced
  • salt (to your liking)
  • 1 lime (cut into 4 halves) 2 to squeeze in the dip, and 2 to flavor the chicken
  • chopped onion

Except I accidentally only bought 3 chicken breast for a party of 4, and ha to cut up the chicken into equal pieces, so we only got a little bit of chicken and a lot of guac. (And I ate the guac right from the bowl with a spoon.)

I also learned that when looking for a ripe avocado in the store, pick off the tail and see if the hole is brown or green, if it is a light green it is a healthy avocado, if it is brown, it is probably bad.

Okay here we go: 3 SIMPLE STEPS

Cut up your vegetables for the guacamole and put it in a bowl.

(Defrosting Chicken)

Grill the chicken with white pepper, salt, olive oil and then lime juice.

Wah La! So easy.
